Butter Chicken was born from a simple idea: to not let good food go to waste.
In the kitchens of Moti Mahal, Delhi, leftover tandoori chicken, which got dry, and slightly tough, was brought back to life in a rich gravy of tomatoes, butter, and cream. The sauce softened every piece, added depth, and created a whole new flavour. That’s how Butter Chicken came to be.
The texture is smooth and velvety, the taste slightly tangy with a hint of sweetness, finished with gentle spices. The tandoor-cooked chicken adds a light smokiness that stays on the palate.
