Satay, a grilled preparation found across Southeast Asia, is built around marinated meat cooked on skewers over direct heat. Phuket Satay uses a marinade of lemongrass, galangal and aromatics, allowing the flavours to develop before the chicken reaches the grill.
The dish is served with a peanut and hoisin dipping sauce. The peanut adds richness, while the hoisin contributes a fermented sweetness that sits alongside the char and spice of the chicken.
