Pistachio Semolina and Orange Syrup Cake .... its a Turkish cake
Tis the season of cakes and here we go with another favorite of mine....needless to say there's orange in it
I thought of writing the full recipe in case you want to try.....you can make it without an oven too
I made this using different cake and tart mould for photography sake
The recipe is easy
50 gm pistachio powdered (can be replaced with almond flour or maida)
50 gm semolina / rava
50 gm flour
50 gm butter at room temperature
50 gm sugar
1 egg
3 tbsp curd
2tbsp Orange juice
1/2 tsp baking powder
A generous pinch of baking soda
A pinch of orange zest
(i powdered the pistachio and semolina together....and mixed with the flour)
Whisk the butter and sugar. Add the egg...add the mixed flour, baking powder and baking soda. Add curd, orange juice and zest.
Pour into greased pan and bake in a preheated oven for about 15 to 20 minutes if you are baking in one shot in an 8 inch pan. My cake was baked in batches for 12 to 14 minutes per cake. Once baked let it cool half way through.
For the syrup
Juice of 2 oranges
1/2 tea cup water
5 - 6tbsp sugar
Zest of orange + A cup of water
Add the zest of orange to a cup of boiling water, let stand for a minute....drain and place it in ice cold water.
Boil the 1/2 tea cup of water and sugar for about 2 to 3 minutes and then add the orange juice. Bring it to a boil and then turn off heat and let it cool completely. Pour the syrup on the warm cake.
The syrup can be prepared first...so that the timing is perfect for it to cool down.
