Spinach and cheese stuffed chicken with butter garlic beans for dinner today...... Perfect to get back on some good nutrition. 😊

Spinach and cheese stuffed chicken

Wash and prepare chicken breasts by carefully cutting a pocket. Season well with dry spices of your choice (i used smoked paprika, parsley, salt and pepper. Prepare the cheese stuffing by mixing together cream cheese, spinach and finely chopped green chillies. (Can combine a combination of parmesan, mozrella and ricotta cheese, also can replace spinach with mushrooms) Take seasoned chicken breast and fill the chicken pockets with the stuffing. Sear the chicken well in a hot pan and transfer to a baking dish and finish in a preheated oven. The baking time is approximately 15 to 20 mins. Serve immediately.

Butter garlic beans

Wash and trim beans. Steam them for approximately 5 to 7 mins. In a hot skillet add butter and freshly chopped garlic, add beans and saute for a few mins. Season with salt and pepper. Serve immediately along with chicken.
