𝗜𝗡𝗚𝗥𝗘𝗗𝗜𝗘𝗡𝗧𝗦⁠
2 cups shredded cheddar⁠
1 tbsp. extra-virgin olive oil⁠
1 small onion, chopped⁠
3 cloves garlic, minced⁠
1 lb/ 450g. ground beef⁠
1 tsp. chili powder⁠
1/2 tsp. ground cumin⁠
1/2 tsp. paprika⁠
Kosher salt⁠
Freshly ground black pepper⁠
Sour cream, for serving⁠
Diced avocado for serving⁠
Freshly chopped cilantro, for serving⁠
Chopped tomatoes for serving⁠
𝗜𝗡𝗦𝗧𝗥𝗨𝗖𝗧𝗜𝗢𝗡𝗦⁠
Preheat the oven to 375°F/ 190°C and line a large baking sheet with parchment paper. Spoon about 2 tablespoons cheddar a few inches apart. Bake until bubbly and edges are beginning to turn golden (approx. 6 min). Set aside for 1 min.⁠
Grease the bottom of a muffin tin with cooking spray, then gently pick up melted cheese slices and place them on the bottom of a muffin tin. Use your hands to help mold the cheese around the inverted tin. ⁠
In a large skillet over medium heat, heat oil. Add onion and cook, occasionally stirring, until softened, about 5 minutes. Stir in garlic, then add ground beef. Cook until beef is no longer pink (6 min), then drain fat. ⁠
Return meat to skillet and season with chili powder, cumin, paprika, salt, and pepper. ⁠
Transfer cheese cups to a serving platter. Fill with cooked ground beef and top with sour cream, avocado, cilantro, and chopped tomatoes.⁠

Buttery Garlic Shrimp and Zucchini
This is a quick and easy meal. Since shrimp doesn’t take long to defrost I like to keep a bag of frozen shrimp in the freezer for times when I don’t really feel like cooking. I also just love everything about this meal. Who doesn’t love buttery shrimp? 😍

Peel and de-tail the shrimp. In a heated pan add some butter and olive oil. Next add your shrimp to the pan and cook through, than transfer to a plate. In the same pan add a little more oil and sauté sliced zucchini. Before the zucchini is done add the shrimp back to the pan, with fresh minced garlic, salt and pepper than sauté together for another minute or two.
