Classic Tomato Soup Recipe

👉 Ingredients:
1. 2 tbsp olive oil or butter
2. 1 medium onion, chopped
3. 2–3 garlic cloves, minced
4. 1 can (28 oz) whole peeled tomatoes or 6–8 fresh ripe tomatoes (chopped)
5. 1 tbsp tomato paste (optional, for richness)
6. 2 cups vegetable or chicken broth
7. 1 tsp sugar (to balance acidity)
8. Salt & pepper, to taste
9. Fresh basil
10. ½ cup heavy cream (optional, for creaminess)
👉 Instructions:
1. Sautéed the aromatics_
In a large pot, heat olive oil or butter over medium heat. Add chopped onion and cook until soft and translucent (about 5–6 minutes). Add garlic and cook for 1 more minute.
2. Add tomatoes_
Stir in the tomato paste (if using), then add the tomatoes (with juices if canned). Break them up with a spoon.
3. Add broth & simmer_
Pour in the broth, stir, and bring to a boil. Reduce heat and simmer for 15–20 minutes, allowing flavors to develop.
4. Blend it smooth_
Use an immersion blender directly in the pot, or carefully transfer to a blender in batches until smooth.
5. Season & finish_
Stir in sugar, salt, and pepper to taste. Add fresh herbs or cream if using. Simmer 5 more minutes, then taste and adjust.
6. Serve_
Ladle into bowls. Serve with grilled cheese, croutons, or a drizzle of cream.
