Food can tell us a lot about a society in the past and the present, including what people lived on and how they managed to create a food supply, often in difficult circumstances.
Many historians believe that biryani originated from Persia and was brought to India by the Mughals. Biryani was further developed in the Mughal royal kitchen.
There are many legends about the evolution of Biryani. One of the popular being the story that Mumtaz Mahal, wife of Shah Jahan visited the army barracks and she found that the Mughal soldiers looked undernourished. In order to provide a balanced diet to the soldiers, she asked the chefs to prepare dish with meat and rice. The dish was whipped up with spices and saffron and cooked over wood fire. But equally, we have also read that the pulaos and biryanis were the part of the royal tradition too. They are court dishes, created to please nawabs and nobles with focus often on elements like aroma and fragrance.
Every part of the country has its own version of biryani, telling us that we are all one, but we can be different too!
At Tango, we currently have 2 main versions of biryanis- Masaledar Biryani for the ones who like it loaded with North-Indian masala and spices and Lucknawi Biryani that has a uniquely delicate, aromatic, light, mild and subtle flavors
