My new favorite way to eat dumplings, plus a trick you can use with any filling or meatball. Recipe below 👇
Filling:
1 lb ground pork, 1 cup napa cabbage (thin, squeezed dry), 4 green onions, 1 tbsp ginger, 3 cloves garlic, 1 cup mushrooms, 2 tbsp soy sauce, 1 tbsp oyster sauce, 1 tbsp sesame oil, 1 tbsp Shaoxing wine, ½ tsp salt, ½ tsp white pepper, ½ tsp MSG
Broth gel:
1½ cups chicken stock, 1 tsp soy sauce, 1 tsp gelatin
Bring to a boil, kill the heat, whisk in gelatin, chill until set
Mix the filling until it tightens up.
Wet wonton wrappers and layer with the filling and broth gel until used up.
Steam over simmering water, 25 minutes. Rest, then slice.
Finish with scallions, chili crisp, sesame seeds, and black vinegar

This has been one of the most humbling and exciting fitness chapters in life. It’s amazing much harder. I have to train at this stage to just be average at this sport. I shaved off 8 minutes from my last time. In life like in a race, you go faster and harder at the end.
