In baking, flour isn't just a filler—it forms the structural backbone of your recipe through protein. When hydrated, these proteins form gluten.
Here is how the main types stack up:
Bread Flour: At roughly 12-14% protein, this flour creates a strong, elastic gluten network. It traps yeast gasses perfectly, giving artisanal breads and bagels that iconic, chewy texture.
All-Purpose Flour: Sitting pretty at about 10-12% protein. It’s a blend of hard and soft wheat designed to handle a bit of everything. Your go-to for chocolate chip cookies, pancakes, and biscuits.

Cake Flour: Coming in at just 5-8% protein. It's usually chlorinated (bleached), which weakens the gluten even further and allows the batter to hold more fat and sugar. The result? Melt-in-your-mouth tender cakes
Self-Rising Flour: This is the ultimate shortcut flour! It’s a pre-blended mix of all-purpose flour, baking powder, and a touch of salt. It’s the secret to ultra-fluffy Southern biscuits, quick breads, and easy pancakes.
Whole Wheat Flour: Contains the entire wheat kernel (bran and germ included). While high in protein, the sharp edges of the bran actually cut gluten strands, leading to a denser bake. It's why many recipes mix it 50/50 with white flour!
