Ceylon cinnamon, also known as "true cinnamon," is a highly valued spice derived from the bark of the Cinnamomum verum tree, which is native to Sri Lanka (formerly known as Ceylon). It is considered the premium variety of cinnamon due to its distinct flavor, delicate aroma, and numerous health benefits. Ceylon cinnamon has a lighter, sweeter, and more complex taste compared to its more common counterpart, cassia cinnamon. Its flavor is subtly citrusy with hints of floral and vanilla notes. The thin, fragile bark of the Ceylon cinnamon tree is light brown in color and can be easily ground into a fine powder or rolled into delicate cinnamon quills.

In addition to its culinary uses, Ceylon cinnamon has been treasured for centuries for its medicinal properties. It is believed to have anti-inflammatory, antioxidant, and antimicrobial properties, and it may help regulate blood sugar levels and promote heart health. Ceylon cinnamon is often used in traditional Ayurvedic and Chinese medicine practices.
