Prawns, Brown Butter & Hazelnuts. This is quite truly the star of our new menu. Everyone has been loving it, and I’m finding myself incorporating brown butter and hazelnuts into so much more.

As October winds down I am pretty much already in Christmas mode. Tbh I was planning Christmas three months ago 🙄 I mean is there a reason to not ?

And while Christmas is my playground for all the funsies, I find myself always returning to familiar, simple and grounding dishes like this one.

A culinary whisper from one island to another: our Jerk Fish. This dish is not just joining our new menu - it’s leading the dance.

Our home made Jerk Spice rub is added to locally sourced Barramundi and grilled to a hairline from burning. It is then finished with a scotch bonnet relish.

Each bite is a beautifully tender and flaky mouthful followed by a fiery kiss of spice and smoke
