Introduction To Processing
-
Different types of coffee proccesing create various tasting profile in a cup of coffee, there's three conventional method are:

1. Natural
2. Washed
3. Honeyed.

Coffee cherries are carefully handpicked to choose only the shiny, red - ripe cherries, then process them by removing the skin and let them dry. At this state, natural fermentation begins to enhance the flavors in coffee beans. Drying can take days, weeks, or months depends on the weather until the moisture content of the cherries drops to 11% - 14%. Before packing and storing, last step is to grade and sort out defected green beans, foreign item such as stone, branches, beans defected by bugs.

We work closely with our farmer in Myanmar. Our collabration bring in more unique and exciting taste sensations to our potential customers. We make sure to deliver a better and consistent quality to you.

New Seasonal Blend is here! This time is with Yirgacheffe!

For those who do not know, Yirgacheffe is a town in central southern Ethiopia.

According to history, Ethiopia is the birthplace of coffee! The myth is that a young goat herder named Kaldi noticed his flock becoming energetic after eating some mysterious red berries. After trying the berries himself he felt a huge surge of energy. Kaldi had just discovered coffee beans.

Yirgacheffe has an elevation between 1,880 and 1,919 metres above sea level. It is the administrative centre of Yirgachefe woreda (is not Wakanda?!), an important coffee growing area. Amongst the many beans grown and harvested in Ethiopia, the ones from the Yirgacheffe region in Sidamo are some of the best in the world. Yirgacheffe coffee beans taste note is very nutty and quite fruity ... almost like Peanut Butter Jam!
