🌾 80% bread flour
🌾 10% whole wheat
🌾 10% rye
💧 80% hydration
20% starter
2% salt

The result? A loaf with a light, airy crumb, a thin crackly crust, and a depth of flavour that’s richer than a classic white sourdough. The whole wheat adds a gentle nuttiness, while the rye brings subtle earthy notes, all without compromising the soft, open texture.

Slow-fermented, naturally leavened, and baked with patience from start to finish.
