Today on our Recipe and Spice menu is Nigerian Coconut Rice.
Ingredients: Rice, coconut milk, chicken/turkey, liver, chilli pepper, salt, onions, seasoning cubes, thyme, vegetables(carrot, green peas, green pepper).
1. Parboil rice.
2. Cook chicken/turkey and liver and keep the stock.
3. Fry meat and vegetables
4. Add chicken/turkey stock, coconut milk into pot to boil.
5. Add parboiled rice, spice with salt, pepper and other seasoning and fried vegetables.
6. Cook on low heat until it's done.
