How to make home made Chicken Pie
Ingredients
For the Dough:
4 cups all-purpose flour
200g butter or margarine (cold, diced)
1 tsp baking powder
½ tsp salt
Cold water (as needed, about ½ cup)
For the Filling:
300g minced or shredded cooked chicken
2 medium Irish potatoes (peeled and diced)
2 medium carrots (peeled and diced
1 small onion (diced)
2 tbsp vegetable oil
1 seasoning cube
Salt and pepper (to taste)
1 tbsp flour (to thicken)
½ cup water
Procedure
Prepare the Filling
In a pot, heat the oil and sauté the onions until translucent.
Add the diced carrots and potatoes. Stir for 2 minutes.
Pour in the water, seasoning cube, salt, and pepper. Let it cook until the veggies are tender.
Add the shredded or minced chicken.
Mix 1 tablespoon of flour with a little water, then pour into the mixture to thicken it.
Let it simmer for a few minutes, then turn off the heat and allow to cool.
Prepare the Dough
In a bowl, mix flour, baking powder, and salt.
Add diced butter and rub into the flour until it looks like breadcrumbs.
Gradually add cold water and knead until you have a soft, non-sticky dough.
Cover and let the dough rest for about 10-15 minutes.
Assemble the Chicken Pie
Roll out the dough on a floured surface to about ½ cm thickness.
Cut into rectangles or circles, depending on your preferred pie shape.
Scoop some filling onto one side of the dough.
Fold over and seal the edges using a fork.
Place on a greased or lined baking tray.
Brush the top with egg wash for a golden finish.
Bake
Preheat oven to 180°C (350°F).
Bake the pies for 30–35 minutes or until golden brown.
