DELICIOUS MILK BRIOCHE

🌟 INGREDIENTS:

- 3½ cups all-purpose flour
- ¼ cup granulated sugar
- 2 and 1/4 teaspoons instant yeast
- 1 teaspoon salt
- ½ cup warm milk
- 4 large eggs, at room temperature
- ½ cup unsalted butter, softened

🌟 INSTRUCTIONS:

1. In a large mixing bowl, combine the flour, sugar, instant yeast, and salt.
2. In a separate microwave-safe bowl, heat the milk for about 30 seconds until warm (not hot).
3. Add the warm milk and eggs to the dry ingredients. Mix with a wooden spoon or with a stand mixer fitted with the dough hook attachment.
4. Once the ingredients are combined, knead the dough for about 5-7 minutes until it becomes smooth and elastic. If using a stand mixer, beat the dough on medium speed for the same amount of time.
5. Gradually add the softened butter, continuing to knead the dough until it is fully incorporated and the dough becomes soft and slightly sticky.
6. Place the dough in a greased bowl, cover it with a clean kitchen towel, and allow it to rise in a warm place for about 1-2 hours or until doubled in size.
7. Once the dough has risen, gently punch it down to release any air bubbles. Shape it into desired forms, such as small buns or a large loaf.
8. If making buns, divide the dough into equal pieces and shape them into balls. If making a loaf, shape the dough into a log and place it in a greased loaf pan.
9. Cover the shaped dough again with a kitchen towel and let it rise for another 30-45 minutes.
10. Preheat your oven to 350°F (180°C).
11. Bake the brioche in the preheated oven for about 25-30 minutes for buns or 40-45 minutes for a loaf until the top is golden brown and a toothpick inserted in the center comes out clean.
12. Remove the brioche from the oven and allow it to cool in the pan for a few minutes. Then, transfer it to a wire rack to cool completely.

This milk brioche is incredibly soft, fluffy, and perfect for enjoying on its own or toasted with butter or jam. Feel free to customize it by adding raisins, chocolate chips, or other mix-ins before shaping the dough.

French Salted Butter Cookies

Ingredients
• 1 cup salted butter (softened) — 227g
• ¾ cup icing sugar — 90g
• 1 egg yolk
• 1 teaspoon vanilla extract
• 2 cups all-purpose flour — 250g
• 2 tablespoons cornflour — 15g
• ¼ teaspoon baking powder

Instructions

Preheat oven to 170°C and line a baking tray with parchment paper.

Cream the salted butter and icing sugar until light and fluffy.

Add egg yolk and vanilla extract, then mix well.

Add flour, cornflour, and baking powder. Mix into a soft smooth dough.

Transfer dough into a piping bag fitted with a star nozzle or roll and cut into shapes.

Pipe or shape the cookies onto the prepared tray.

Chill the cookies for 10–15 minutes before baking for better shape retention.

Bake for 12–15 minutes or until edges are lightly golden.

Allow to cool completely before storing.

Tips
• Use high-quality salted butter for the best rich flavor.
• Do not overmix the dough to keep the cookies tender.
• Add chocolate drizzle or jam centers for extra flavor.
• Store in an airtight container for up to 1 week.
