Hello to all! Here is a recipe share for the weekend:
It is a recipe for Baba ganoush.
It is a delicious dip made from roasted eggplants. It’s creamy, savory, and perfect to enjoy with a side of freshly chopped veggies or flatbread.
Recipe:

2 medium eggplants
3 tablespoon tahini paste
2 tablespoon extra-virgin olive oil
1 - 2 tablespoon lemon juice
1 garlic clove, minced
salt to taste
1 tablespoon pomegranate seeds &
Parsley or coriander for garnishing

Cooking instructions:
Drizzle the eggplants with some olive oil and bake in the oven untill they are soft and collapsed in the middle. Turn them half way through baking.
Cut the eggplants in half lengthwise and scoop out the flesh onto a cutting board. Roughly chop the eggplants and then
mash them up further with a fork. Add in the tahini, lemon juice, olive oil, garlic, salt. Give everything a good stir to combine.

Transfer the baba ganoush into a serving bowl and garnish with parsley or coriander as well as pomegranate seeds and a drizzle of olive oil.
