Hey there Sweet Eaters!

It’s been a while but I’m back 😍

September the family and I travelled to Turkey for a month and maaaaaan was it something else. I documented the full month over on if you’re interested and wanna look at all the things we got up to 😍

Anyhoo! After an amazing break my cup is so full and I’ve been enjoying working away at some new recipes, eBooks and ideas to keep us all ticking along on our low carb keto lifestyles.

🌟KETO JAM SPONGE ROLL🌟

OK. Bringing back all the childhood memories with this nostalgic little number! Who grew up with these?!

The secret to this fluffy, flexible recipe is the keto flour from Victorias Keto Kitchen over on YouTube.

You can make the flour up yourself with some slightly obscure ingredients (swipe for recipe ➑️) or buy it pre-made from

The flour can be used as a 1:1 replacement for standard white flour or add some raising agents to make it self raising πŸ€— It can’t generally be subbed directly into a standard recipe though as it takes different egg/liquid ratios.

This flour is not cheap but it is a game changer and 100% worth every penny!

Recipe

Need: 25x30cm Swiss roll pan or slice tray of approximate size. Lined with baking paper AND the paper lightly greased

3 eggs
3/4 cups allulose or granulated sweetener of choice (any blend from the supermarket with a 1:1 sugar use ratio is good)
2 teaspoons vanilla essence
3/4 cup keto flour
1 tsp baking powder
2 tbs hot water
1/4 cup keto friendly jam of choice

Do this
πŸ₯šIn a medium sized bowl beat your eggs with an electric mixer until they are thick and creamy
πŸ₯£ Add your sweetener and vanilla and continue to beat until sweetener is dissolved . Mixture will get thicker, creamier and glossier
πŸ₯£ Sift over keto flour and baking powder then fold gently through the egg mixture using a metal spoon
πŸ₯£ Add your hot water and fold through gently again. Mixture will reduce in size slightly but do not overmix or it will go very flat

❀️ Pour mixture into your greased and lined tin then fan bake at 160°C for 20-25mins or until the cake is golden all over and separating from the edges of the pan. It will feel VERY soft to touch still
❀️ Remove from oven then carefully check that your cake will lift from the baking paper. If it is stuck anywhere slide a knife or any long, metal utensil underneath to loosen any sticky bits
❀️ Spread your jam evenly over the cake then roll up! Roll from the short end if you want a high, thick Jam Roll. Roll from the long side if you want a longer, thinner roll like pictured.
❀️ Sprinkle with powdered sweetener, slice and enjoy!
