Lechon originated in Spain and spread throughout all the areas of the colony. The word lechon comes from the Spanish word, which means suckling pig. The first lechon cooked commercially during the American occupation was made in Cebu in the 1920's, and the first- ever lechoneros came from Talisay Cebu.
