ENSALADANG TALONG

INGREDIENTS:
3 to 4 pcs. large talong
3 pcs. tomatoes
1 medium onion
1 thumb ginger
3 to 4 tbsp. vinegar
1 teaspoon sugar
salt and pepper to taste
salted eggs (optional)

PROCEDURE:
1. Ihawin ang talong hanggang masunog ang balat. Then, balatan agad ito. Hiwain ng pahaba or pisain (parang nagtotorta) at ilagay sa pinggan. Set aside.

2. Pagsamahin ang tomatoes, onion, ginger at vinegar. Then, timplahan ng salt, pepper at kaunting asukal. Mix well. Tikman, adjust ang lasa depende sa gusto mo.

3. Saka ilagay sa ibabaw ng talong ang namix na tomato mixture. Naglalagay rin ako ng kaunting salted eggs or itlog na maalat sa ibabaw.

CRISPY EGGPLANT FINGERS

INGREDIENTS:
2 pcs. large eggplant
1 pc. egg
salt & pepper to taste (for egg coating)
1/2 tsp. paprika (or mixed herbs) optional
1 cup cornstarch
2 tsp salt (for cornstarch coating)
1 cup breadcrumbs
oil for frying

PROCEDURE:
1. Hiwain ang talong ng mahaba na hugis finger or fries.
2. Sa isang bowl, magcrack ng isang itlog. Timplahan ng paprika, asin at paminta. Mix well and set aside.
3. Sa another bowl, maglagay ng cornstarch. Timplahan ito ng kaunting salt. set aside. Sa isang hiwalay na bowl, maglagay naman ng breadcrumbs.
4. BREADING: Una, isawsaw ang nahiwang eggplant sa egg mixture. Saka ito ilagay sa cornstarch mixture. Then, isawsaw ulit sa egg mixture, then i-coat ng breadcrumbs. After breading, iderecho sa mainit na mantika at i-deep-fry hanggang maging golden brown. Gawin ang breading steps sa lahat ng eggplant fingers.
