Mrs. Evangeline Baladjay has been cooking ibos for the past 28 years. She has a stall at the Guimbal Public Market where she sells ibos and other rice cakes like p**o, tikoy and suman.

Her secret? Not scrimping on pure coconut milk when boiling her ibos. Also, there is a homemade pulot she provides for special orders. Most market vendors in Guimbal recommend Manang Diding’s ibos for people looking for a delicious rice cake. She receives a lot of orders during fiestas too. Manang Diding’s passion and dedication to her craft paved the way for her two children to finish college.
