Shiitake mushrooms take this Spaghetti Aglio e Olio to a whole new level! 🍄✨ Simple ingredients, big flavors—your new go-to weeknight pasta!
Mushroom Spaghetti Aglio e Olio
Ingredients:
-200g dry spaghetti
-150g shiitake mushrooms, sliced
*** if using dried mushrooms, rehydrate it with hot water and save the liquid for cooking the pasta.
-2 heads garlic, minced/sliced
-1/4 cup extra virgin olive oil
-1/2 tsp chili flakes
-chili garlic flakes (optional)
-garlic crisps (optional)
-salt and pepper, to taste
Procedure:
1.) Cook spaghetti in salted boiling water until al dente (you may add the mushroom water here for extra flavor). Save a bit of pasta water before draining.
2.) In a pan, heat olive oil over medium heat. Add mushroom and sauté until lightly browned (about 3-4 minutes).
3.) Add garlic and cook until fragrant, but do not get it browned (around 1-2 minutes).
4.) Season with salt and pepper.
5.) Add chili garlic and garlic crisps, if using.
6.) Add cooked spaghetti, and a little bit of pasta water. Add chili flakes and mix everything together until well combined.
7.) Taste and season as needed.
8.) Serve on a plate, drizzle with some more olive oil, and garnish with more chili flakes/chili garlic, as preferred.
