🌱🍽️ Learning Sustainability in Action

On March 31, 2026, BSI students participated in a practical workshop on “Sustainable Catering” at the Bangkok Marriott Marquis Queen’s Park.

The session warmly welcomed by Khun Pornticha Wongyannava, Sustainability Manager, and her team, who shared valuable insights into sustainable practices within hotel operations. Students gained a deeper understanding of how sustainability is integrated into large-scale catering services. With the hotel serving over 500 guests per day and generating more than 1 ton of food waste per month, students were given a comprehensive behind-the-scenes tour—from sourcing raw ingredients to buffet line operations, as well as back-of-house management and staff dining facilities. After the tour, students joined hands-on workshops on soap making from used coffee grounds and sustainable cocktails, reinforcing waste reduction and creative reuse in catering.

🙏 Special thanks to the team at Bangkok Marriott Marquis Queen’s Park for this insightful and impactful learning experience.

This workshop is a part of subject SV458 Food Design for Catering Services.
