What's cooking Thursday: Spicy Meatballs with Broccoli soup.
Ingredients:
200 gr mniced beef (get the grass fed beef from Paleo Robbie)
1 onion
1 clove of garlic
2 tsp sambal ulek
Salt and pepper
For the meat balls:
Finely chop the onion, crush the garlic and mix into the mince with salt, pepper and a teaspoon of sambal ulek. Make into balls and fry them gently with a touch of coconut oil on high temperature to seal. After lower the heat and continue to cook for 5-10 minutes
The broccoli soup:
Steam the broccoli for 3-5mins put into a blender.
Add some onion & garlic, not too much so you don't ruin the broccoli taste.
Add 1/4 cup of water
Throw in 2 cooked spicy meatballs for taste and BLEND all together adding salt and pepper to taste...
(If you would like to make the soup more creamy add a few pieces of cooked pumpkin. This can be steamed along with broccoli beforehand)
