This horchata recipe is an ideal beverage to complement all your Mexican-inspired dishes! Whether you're celebrating Cinco de Mayo or enjoying a day by the pool, you'll appreciate this refreshing, sweet drink infused with cinnamon and vanilla, served over ice!
Sip and Savor: A Refreshing Homemade Horchata Elixir

Ingredients:

1 cup long-grain white rice
2 cinnamon sticks
4 cups water
1/2 cup granulated sugar (adjust to taste)
1 teaspoon vanilla extract
2 cups whole milk
Ground cinnamon for garnish (optional)
Directions:

Rinse the white rice under cold water to remove excess starch.
In a blender, combine the rinsed rice, cinnamon sticks, and 2 cups of water. Blend until the rice and cinnamon are coarsely ground.
Add an additional 2 cups of water to the blender and blend again until well combined.
Strain the mixture through a fine-mesh sieve or cheesecloth into a pitcher, separating the liquid from the rice residue.
Discard the rice residue and add sugar and vanilla extract to the liquid. Stir until the sugar is dissolved.
Pour in the whole milk and stir to combine.
Refrigerate the horchata for at least 2 hours or until chilled.
Before serving, stir the horchata well as it may separate during refrigeration.
Optionally, garnish each glass with a sprinkle of ground cinnamon before serving.
