Happy Thanksgiving! The business took a year off as health and family issues became too urgent to take the backseat.

Happily, life is coming back online with new perspectives on priorities and balance. This next chapter is going to be excellent & nontraditional. More on that another day.

For today, we're getting ready to cook a Turkey Day Freast. Since this year it's just Kat & me, there's no rules for the menu!

Yesterday we started brining the 15.5 lbs turkey. I made the brine in the early morning, let it meld, then Kat added the turkey (she named him Ray) to the brine about 4:00pm. The bowls on the side are to keep the solution high up over the breast meat.

Ray will emerge from his bath about 4pm today. Then the fun begins! This is a Thanksgiving without rules.
