🥬 Who freezes cabbage? We do! While frozen cabbage may not be ideal for a big bowl of coleslaw, it’s absolutely delicious in soups, stir-fries, casseroles, and other cooked dishes.
One of our family’s favorites is Egg Roll in a Bowl, but the other night we tried something new: Cabbage Roll Soup. It was hearty, comforting, and a perfect way to use some of the vegetables from the farm.
If you’ve never frozen fresh tomatoes, it’s one of my favorite gardening tricks. Just wash them, freeze them whole, and when you’re ready to cook, let them thaw for a few hours. The skins peel right off with almost no effort, making them perfect for soups, sauces, chili, and casseroles.
Frozen cabbage is just as easy. Simply let it thaw, chop it up, and use it like you normally would in any cooked recipe.
Cabbage Roll Soup
Ingredients
* 1 lb ground beef
* 1 lb ground chicken (or beef, pork, or turkey)
* 1 onion, chopped
* 2–3 carrots, chopped
* 3 cloves garlic, minced
* 1 tsp paprika
* 1 tsp Italian seasoning
* ½ tsp red pepper flakes (optional)
* 1 head cabbage, chopped
* 4 cups beef broth
* 1 Tbsp Worcestershire sauce
* About 1½ cups chopped or blended tomatoes (fresh frozen tomatoes work beautifully!)
* 1 Tbsp tomato paste
* 1 cup cooked rice (or ½ cup uncooked rice added during cooking)
* Salt and pepper to taste
* A pinch of sugar and a dash of ground cloves (both optional)
Directions
1. Brown the ground beef, chicken, onion, and carrots. Drain if needed.
2. Add the garlic and seasonings. Cook for another minute.
3. Stir in the cabbage and cook until it begins to soften.
4. Add the broth, tomatoes, tomato paste, and Worcestershire sauce. Bring to a simmer and cook for about 15 minutes.
5. Stir in the rice and cook until everything is hot and the cabbage is tender.
6. Taste and adjust the seasoning.
Simple, filling, and a delicious way to enjoy fresh summer vegetables all year long.

We’ve had several people ask us about the recent Cyclospora outbreak, so we wanted to address it and share a little about our farm and how we grow our produce.
Cyclospora is a microscopic parasite that people can become infected with by consuming contaminated food or water. According to the CDC, it is not spread from person to person through casual contact, which is why they have been looking at the growing and handling of produce. Public health officials continue to investigate the source of the current outbreak.
Here at Neighbor Boy Farm, our fruits and vegetables are watered through drip lines and hoses supplied with water directly from the same well we use for drinking water. We harvest our produce by hand and bring it straight from the field to our farm stand with very little additional handling. Some of our produce is also frozen right here on the farm shortly after harvest.
To date, no illnesses have been reported in connection with produce from our farm. As with any fresh produce, we always recommend washing, peeling, or cooking fruits and vegetables before eating, following standard food safety recommendations.
