'Tis the season for soups! Try this Creamy Cauliflower Leek soup for something warm and comforting over the holidays.

Creamy Broccoli Leek Soup Makes about 10 cups Ingredients: 1/4 cup ghee 3 leeks, white and green parts only, halved lengthwise and sliced thin (1 pound 10 ounces prepped) 2 1/2 pound broccoli, florets chopped, stems peeled and sliced thin (1 pound 12 ounces prepped) 3 garlic cloves, minced 4 cups Imagine Free Range Organic Chicken Broth 2 tablespoons Annie's Organic Dijon Mustard 1/2 teaspoon sea salt 1 teaspoon pepper Instructions: 1. Melt ghee in large pot over medium heat. Add garlic and let brown, about 4 minutes. Add leeks and broccoli stems and cook until just beginning to soften, about 8 minutes. Stir in broth and bring to a boil. Add broccoli florets to the top and reduce heat to medium. Simmer, covered, until stems and florets are soft, about 13 minutes. 2. Working in batches, transfer soup to blender and puree until completely smooth, about 1 minute. Add mustard, salt, and pepper and puree until well combined. Serve.
