🥔 Irish Colcannon (Creamy Potatoes with Cabbage)
Ingredients:
🥔 2 lbs potatoes (peeled & chopped)
🧈 4 tbsp butter
🥛 1/2 cup milk or cream
🥬 2 cups chopped cabbage (or kale)
🧅 3 green onions (chopped)
🧂 Salt & pepper to taste
Instructions:
🍀 Boil potatoes until soft, then drain and mash.
🧈 In a pan, sauté cabbage (or kale) in butter until tender.
🥛 Warm the milk and mix it into the potatoes for a creamy texture.
🥄 Stir in the cabbage and green onions.

🌼 1 yellow squash, sliced

🍋 Zest and juice of 1 lemon

🫘 Hearty & Healthy Vegetarian Chili
🛒 Ingredients (Serves 4–6)
1 tbsp olive oil
1 small onion, diced
1 bell pepper, diced
2 cloves garlic, minced
1 zucchini, diced
1 cup mushrooms, chopped
1 can (15 oz) kidney beans, drained & rinsed
1 can (15 oz) black beans, drained & rinsed
1 can (15 oz) diced tomatoes
1 small can tomato sauce (8 oz)
1 cup vegetable broth
1 tbsp chili powder
1 tsp cumin
½ tsp smoked paprika
Salt & pepper to taste

Heat olive oil in a large pot over medium heat.
Sauté onion and bell pepper for 3–4 minutes until softened.
Add garlic, zucchini, and mushrooms. Cook another 3–5 minutes.
Stir in beans, diced tomatoes, tomato sauce, and vegetable broth.
