๐Ÿ  Crispy Sweet Potato Nacho Boats ๐Ÿง€๐ŸŒถ๏ธ
The perfect fusion of comfort food and healthy indulgence!

๐Ÿ“Œ Ingredients:

2 large sweet potatoes (long and thick)

1/2 cup black beans (cooked or canned, drained)

1/2 cup corn kernels (fresh or frozen)

1/4 cup diced red onion

1/4 cup diced tomatoes

1/2 tsp smoked paprika

1/2 tsp cumin

Salt & pepper to taste

1/2 cup shredded cheese (cheddar or Mexican blend)

1/4 cup sour cream or Greek yogurt

1 ripe avocado (diced)

Fresh cilantro (for garnish)

Olive oil

๐Ÿง‘โ€๐Ÿณ Instructions:

Prep the Sweet Potatoes:
Preheat oven to 400ยฐF (200ยฐC). Wash and slice sweet potatoes lengthwise into halves. Scoop out a shallow โ€œboatโ€ in each half with a spoon (donโ€™t go too deep). Lightly brush with olive oil and season with salt and pepper.

Bake:
Place sweet potato halves on a baking sheet, skin side down. Bake for 25โ€“30 minutes or until soft but still holding shape.

Make the Filling:
In a bowl, mix black beans, corn, onion, tomatoes, smoked paprika, cumin, and a dash of salt and pepper.

Assemble & Melt:
Remove sweet potatoes from the oven. Fill each boat with the bean mixture and sprinkle cheese on top. Return to the oven for another 5โ€“7 minutes, until the cheese is melted and bubbly.

Top It Off:
Remove from oven, drizzle with sour cream or Greek yogurt, add diced avocado, and sprinkle chopped cilantro on top.
