Our founder James shares how we thinks about finishes:
“Whiskey finishing has become one of the defining trends of modern American whiskey—and for good reason.
At its best, finishing can add entirely new dimensions to a spirit. A well-chosen cask brings added aromatics, texture, depth, and contrast to an already compelling whiskey. At its worst, though, finishing becomes camouflage. Too much sweetness, too much tannin, or too much secondary cask influence can overwhelm the base spirit until you’re no longer tasting the whiskey itself—you’re tasting the finish.
That’s never been our philosophy.
We don’t finish whiskey to fix it. We finish whiskey because we think there’s another side of the spirit worth exploring. The goal is never to bury the whiskey under secondary flavors, but to reveal something new in a profile that already stands on its own. Rather than dominating the spirit, the finishing cask should allow new layers of flavor to integrate naturally into the existing whiskey.
And sometimes, those layers create something you never could have predicted.” -James, Whiskey Doctor
Our latest release was an intentional finishing process that was a 2-year journey! We are certain you will appreciate how this finish revealed a beautiful expression for both our bourbon and rye.

Meet the Genius - it’s inconceivable.
We keep using that word… but when you taste this spirit, you’ll understand why.
This is the very first rum-finished rye from J. Henry & Sons, and we are quite proud of that. Which rum barrel? The Rum King barrel—“an absolutely insane rum” barrel (James’s words).
We aren’t ready to share the tasting notes yet - we just wanted to tease a bit with what’s to come!
What we will say - this rum-finished rye is Inconceivably balanced.
May 26, everything arrives.
