Not in a million years did I think I would have a menu item at Uchi. This is just a small thing but I’m quite proud - during Happy Hour for the summer you can order the Bincho Handroll at Uchi, and taste something I made with ingredients that I love and are inspired by health and the seasons. This was possible alongside a few rounds of feedback from the Exec Chefs, thank you.
Inspiration: Mango - fruit & sushi r divine
Interior: Bincho, Avocado, Crispy Shallots, Pickled Mango
Sauce: Mango Chamoy (spicy, yet balanced by salt, mango and agave).
