Really digging this Sperlonga bread, part of the new scratch bread program we've been working on for the Lamar flagship Whole Foods store (what an amazing opportunity!). It's part of a soft launch series with baguette, ciabatta and rustic Italian breads. This weekend we'll release the sourdough country set followed by some very special breads in December (some which are familiar to my former subscribers ;).

I'm really grateful to continue my long relationship with by using their heirloom grain flours in all of our new breads. Even the "white" ones have a decent proportion of whole grain Yecora Rojo wheat and Wren's Abruzzi rye. Everything is made using an extensive multistage process and over 40 hours of fermentation. Look for the red "Made with Barton Springs Mill" label.
