Two starters, two pastas — Chef David kept it focused this week, and both sides of the menu land.
Wood Oven Roasted Aged Provolone Cheese (Provoleta) — charred sweet tri-color peppers, orange-infused spicy honey. It comes out of the wood oven soft in the center with just enough char on the outside. The honey pulls it together.
Smoked Pork Belly (Pancetta Affumicata) — cracked black pepper, Gorgonzola crumble, orange-infused spicy honey. Same honey, completely different dish. The Gorgonzola and pork belly is a combination that shows up in northern Italian cooking for good reason.
Wood-Grilled Chicken, San Daniele Prosciutto, Wild Mushrooms, Parmesan Cream Sauce, Fresh Linguine (Pasta con Pollo e Prosciutto) — the chicken goes on the wood grill before it hits the pasta, which matters. San Daniele is the prosciutto from Friuli — a little sweeter and more delicate than Parma. Good call here.
Pan-Seared Bay Boat Scallops, Asparagus, White Wine Risotto (Capesante) — the lighter option this week. If you want something clean and precise, this is it. One of the better Italian restaurant dishes you’ll find in Austin right now.
Pro tip: If you’re split between the two starters, order both and share — they’re sized for it and the contrast between the two is half the point.

Every Monday, $26 gets you a two-course dinner built around the classics that made Roman trattorias famous — Cacio e Pepe, Carbonara, Amatriciana, or Pasta alla Gricia. Each one made with fresh tagliatelle, guanciale, and Pecorino Romano. Start with a Caesar or the soup, then pick your pasta.
Pro tip: Pasta alla Gricia is the one people overlook — it’s the foundation the others were built on, just guanciale, Pecorino, and black pepper. Worth trying if you haven’t.
