I tried to make a layer cake! Since layer cakes are pretty uncommon in French pastry, this was a very strange experience for me, not knowing what I’m doing AT ALL! Turned out better than I thought, but lots of room for improvement! I will keep practicing 💪💪💪. an updated classic: fresh mixed fruit tart! vanilla pastry cream jazzed up w/ whisky, passion fruit, & yumé boshi’s plum vinegar, w/ a drizzle of yuzu marmalade.

New flavor testing: Mariage Freres earl grey ganache w/ (more than) a dash of vanilla-infused scotch 😋. Inspired by signature tart 🙏 🙏 🙏 @ Berkeley, California
