No better time than now to build todays version of a Victory Garden...pandemic style.
We're expanding our kitchen garden with ease of access as the leading requirement so we're able to grow and harvest more then ever with lower time and energy demands.
It will be hard to miss a ripe tomato or perfect radish being right outside of our favorite window view. I always suggest placing your veg garden in the closest place possible to the door or kitchen.

It's early March in Minneapolis Minnesota and the Maple sap is flowing! Now's the time to tap your trees if you want to try making Maple Syrup or Maple Sugar.
It's so simple, all you'll need is a way to drill a hole, a tap and a bucket/hose.
Don't go too deep, the sap flows in the outer 1" or so of the tree and this is where you'll want your tap to be. Check your buckets daily to see how much you've collected and once you have your desired amount, it's time to start boiling.
Boiling, or evaporating as it's called, can be done on the stove top or outside. I prefer to build a nice evaporator outside as the cool weather will promote faster evaporation of the water in the sap. This process takes a while and the final few minutes are the most crucial so make sure to start early in the day.

More exciting news for the Roosevelt Urban Farm phase 2 garden expansion happening this spring - we are a finalist for the 2019 Permaculture Institute of North America (PINA) Design Contest for Community Development.
