Ingredients:
For the Chocolate Sponge Cake:
3/4 cup (95g) all-purpose flour
1/4 cup (30g) cocoa powder
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
4 large eggs, at room temperature
1 cup (200g) granulated sugar
1/3 cup (80ml) vegetable oil
1 teaspoon vanilla extract
1/2 cup (120ml) buttermilk, at room temperature
For the Cherry Filling:
2 cups pitted fresh or frozen cherries (or canned cherry pie filling)
1/4 cup (50g) granulated sugar
1 tablespoon cornstarch
1 tablespoon lemon juice
2 tablespoons kirsch (cherry liqueur), optional
For the Whipped Cream:
2 cups (480ml) heavy whipping cream
1/4 cup (30g) powdered sugar
1 teaspoon vanilla extract
For Garnish:
Shaved chocolate or chocolate curls
Fresh cherries
Instructions:
Prepare the Chocolate Sponge Cake:
Preheat your oven to 350Β°F (175Β°C). Line a 10x15-inch jelly roll pan with parchment paper and lightly grease it.
In a medium bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt. Set aside.
In a large mixing bowl, beat the eggs and granulated sugar on high speed until thick and pale, about 5 minutes.
Add the vegetable oil and vanilla extract, mixing until combined.
Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined.
Pour the batter into the prepared pan, spreading it evenly with a spatula.
Bake for 12-15 minutes, or until the cake springs back when lightly touched and a toothpick inserted into the center comes out clean.
Immediately roll the warm cake with the parchment paper from the short end, forming a log. Allow it to cool completely, seam side down.
Prepare the Cherry Filling:
In a medium saucepan, combine the cherries, granulated sugar, cornstarch, and lemon juice.
Cook over medium heat, stirring constantly, until the mixture thickens and the cherries soften, about 5-7 minutes.
Remove from heat and stir in the kirsch, if using. Let the cherry filling cool completely.
Prepare the Whipped Cream:
In a large mixing bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract until stiff peaks form.
Assemble the Roll Cake:
Carefully unroll the cooled cake and remove the parchment paper.
Spread a layer of the cherry filling over the cake, leaving a small border around the edges.
Spread a layer of whipped cream over the cherry filling.
Gently roll the cake back up without the parchment paper, using the filling as the center.
Garnish the Roll Cake:
Spread the remaining whipped cream over the outside of the roll cake.
Garnish with shaved chocolate or chocolate curls and fresh cherries.
Serve and Enjoy:
Refrigerate the cake for at least 1 hour before slicing and serving to allow it to set.
