Why Taro Isn’t Bright Purple After Cooking？

The purple color in taro comes from natural plant pigments called anthocyanins.
When taro is steamed or cooked, heat can weaken or break down these pigments, causing the color to fade.

Once taro is cut and exposed to air, it begins to oxidize. This can shift the color from purple to light lavender, grey, or beige.
