🌶️ “Stars & Spice” Burger 🌶️

(Makes 4 burgers)

🔥 Ingredients:

For the Patties:
• 1.5 lbs ground beef (80/20 for juiciness)
• 1 chipotle pepper in adobo sauce, finely chopped
• 1 tsp smoked paprika
• 1/2 tsp cumin
• Salt & pepper to taste

For the Spicy Mayo:
• 1/2 cup mayo
• 1 tbsp sriracha
• 1 tsp lime juice
• 1/2 tsp garlic powder

Toppings (Red, White & Blue Theme):
• Red: Grilled roasted red peppers or tomato slices
• White: Monterey Jack cheese or pepper jack for extra heat
• Blue: Blue cheese crumbles or a blue cheese aioli
• Pickled jalapeños (for extra heat!)
• Red onion slices
• Butter lettuce

Buns:
• Brioche or potato buns, toasted

Optional patriotic garnish:
• Mini American flags on toothpicks
• Red, white, and blue napkins or skewers

🔥 Directions:
1. Prep the Patties:
• In a large bowl, mix the beef, chopped chipotle, smoked paprika, cumin, salt, and pepper.
• Form into 4 equal patties. Press a slight indent in the center to prevent puffing.
2. Make the Spicy Mayo:
• Mix mayo, sriracha, lime juice, and garlic powder. Chill until serving.
3. Grill Time:
• Preheat grill to medium-high heat.
• Grill burgers ~4-5 minutes per side, or until your desired doneness.
• Add cheese slices during the last minute of grilling to melt.
4. Toast the Buns:
• Lightly butter and grill the buns for 1-2 minutes until golden.

April Fools Inferno Burger Is No Joke

Ingredients:
• 1 lb Ground Beef
• 1/2 cup Finely Chopped Onion
• 1/4 cup Finely Chopped Jalapeño
• 1/4 cup Finely Chopped Habanero
• 2 cloves Garlic, minced
• 1 tsp Salt
• 1 tsp Black Pepper
• 1 tsp Paprika
• 1/4 tsp Cayenne Pepper
• 4 hamburger buns
• Lettuce
• Tomato
• Cheese (optional)
• Spicy mayo or sauce (e.g., sriracha mayo)

Instructions:
1. Prepare the Patties: In a large bowl, mix together the ground beef, onion, jalapeño, habanero, garlic, salt, black pepper, paprika, and cayenne pepper. Use your hands to mix until just combined.
2. Form the Patties: Divide the mixture into 4 equal parts and shape each into a round patty.
3. Cook the Patties: Grill or pan-fry the patties until they are cooked to your desired level of doneness.
4. Assemble the Burgers: Place each patty on a bun. Add lettuce, tomato, cheese (if using), and a dollop of spicy mayo or sauce.

Spicy Valentine’s Day Chili Recipe

This chili recipe has a kick of heat and can be adjusted to your spice preference.

Ingredients:

• 3 lbs ground beef, or half sausage and half ground beef
• 1 green pepper, diced
• 1 red bell pepper, diced
• 1 medium onion, diced
• 3 small jalapeño peppers, diced (seeds and veins removed for less spice)
• Salt and pepper to taste
• 2 teaspoons garlic powder
• 1/3 cup chili powder
• 1 1/2 Tablespoons cumin
• 1 1/2 cups ketchup
• 3 Tablespoons lime juice
• 1 Tablespoon brown sugar
• 1 Tablespoon Worcestershire sauce
• 2 teaspoons vinegar
• 1 1/2 teaspoons mustard
• 3 cups spicy hot V8, or regular
• 16 oz can kidney beans
• 1 14.5 oz can fire-roasted tomatoes

Instructions:
1. In a large saucepan, brown the ground beef and ground sausage (if using), using a wooden spoon to break it into small pieces as it cooks. Drain most of the grease and remove meat to a plate.
2. Add onion, bell peppers, and jalapeño peppers to the pot and sauté on medium-high heat for 2-3 minutes.
3. Add spices, ketchup, lime juice, brown sugar, Worcestershire, vinegar, mustard, and V8. Stir well. Add beans, tomatoes, and salt and pepper.
4. Return the ground meat to the pot and bring the mixture to a low boil. Turn to a low simmer, cover, and cook for 1-2 hours.

Tips for Valentine’s Day:
• Heart-shaped peppers: Cut red bell peppers into heart shapes to add a festive touch to the chili.
• Sweetness: Add a touch of honey or maple syrup to enhance the sweetness of the chili, balancing the spice.
• Toppings: Serve with toppings like sour cream (or Greek yogurt), shredded cheese, green onion, or sliced avocado.
• Spice level: Adjust the amount of chili powder, cayenne pepper, or hot sauce to control the spice level.
• Wine Pairing: Red wine can pair nicely with spicy beef chili.
