Finca Himalaya - Maragogype Natural

Boxcar’s newest Reserve Series release marks the start of our 15th consecutive season in collaboration with direct trade partner Mauricio Salaverria. This collection highlights one-of-a-kind and exceptional coffees, from vintage lots preserved in our deep freezer to unique processing methods and rare varieties, expertly roasted to highlight their unique attributes.

Grown at Mauricio Salaverria’s prized farm, Finca Himalaya, this Maragogype variety is almost more candy-like than coffee-like! Expect a syrupy and mouthwateringly bright cup with huge flavors of canned peaches, fresh passionfruit, and key lime in the finish.

This lot of Maragogype variety, a low-yielding, rust-susceptible variety originating from Brazil, was processed using what Mauricio and his team call the “Tamal” method. To create intense sweetness and accentuate acidity, the cherries are fermented under layers of burlap and black plastic in a long mounded structure. This setup increases the temperature of the fermentation in a controlled manner, allowing the team to ferment the coffee to their desired cup profile; high-intensity with no “rotten” flavors.
