This is a carrot cake. The exact one pictured went to a lucky birthday celebration today, but here’s a bit of luck for you: I’ll be making more for this weekend!
This carrot cake hits all the same buttons as a traditional version, but with a couple of tweaks that make it extra special. In addition to some of the classic spices, I add a bit of cardamom, and, instead of the more typically-used walnuts, I go for toasty pecans. As always, it’s 100% vegan + gluten-free (that tangy frosting is made with cashew cream cheese).
Reviews from the birthday gathering came in quickly and were as follows: “What a cake!!! We all, even the non-vegans, loved it. Absolutely one of the best cakes we've all ever had.”
