This one sounds unexpected… but TRUST me.
Creamy parmesan sauce, tender chicken, garlic, a touch of tang, and crispy salt & vinegar pork rinds crushed over the top for the perfect salty crunch. 🤍
It’s cozy, bold, a little nostalgic, and somehow tastes like comfort food and late-night snacks had a delicious pasta baby.
Finished with black pepper, chives, and plenty of parmesan.

Creamy Salt & Vinegar Pork Rind Pasta 🍝
Ingredients
Pasta + Protein
* 8 oz pasta
* 1 lb chicken thighs or chicken breast, diced
* Salt & pepper
* Olive oil
Sauce
* 2 tbsp butter
* 3 cloves garlic, minced
* 1 small shallot or onion, diced
* 1 cup heavy cream
* ½ cup chicken broth
* ¾ cup parmesan cheese
* 1–2 tsp Dijon mustard
* 1 tbsp cream cheese (optional)
* 1–2 tsp white wine vinegar or apple cider vinegar
* Black pepper
Crunch Topping
* 1–1½ cups crushed salt & vinegar pork rinds
* 2 tbsp chopped chives or green onion
Optional Add-Ins
* Peas
* Spinach
* Crispy bacon
* Lemon zest

Instructions
1️⃣ Cook the Pasta
Bring salted water to a boil and cook pasta until al dente.
Reserve 1 cup pasta water before draining.

2️⃣ Cook the Chicken
Season chicken with salt and pepper.
Heat olive oil in a skillet and cook chicken until golden and fully cooked.
Remove from pan and set aside.

3️⃣ Make the Sauce
In the same skillet:
* melt butter
* sauté shallot/onion until softened
* add garlic and cook 1 minute
Pour in:
* chicken broth
* heavy cream
Simmer for 3–4 minutes.
Whisk in:
* parmesan
* Dijon mustard
* cream cheese
Add vinegar last for a light tangy finish.

Add cooked pasta and chicken back to the skillet.
Use reserved pasta water as needed to loosen the sauce.

Top with:
* crushed salt & vinegar pork rinds
* chives
* black pepper
* extra parmesan

🍝✨ White Wine Zucchini & Squash Pasta
Buttery, bright, fresh, and comforting in all the right ways. This simple pasta comes together with zucchini, yellow squash, garlic, white wine, parmesan, and a little lemon for balance. 💛
Ingredients
Pasta
• 8–10 oz pasta
Vegetables
• 1 zucchini, sliced into half moons
• 1 yellow squash, sliced into half moons
• 1 medium onion, thinly sliced
• 3 cloves garlic, minced
Sauce
• 4 tbsp butter
• ½ cup dry white wine
(Pinot Grigio or Sauvignon Blanc work beautifully)
• ½ cup reserved pasta water
• ½ cup parmesan
• Juice of ½ lemon
• Salt & black pepper
Optional Additions
• Fresh basil
• Red pepper flakes
• Ricotta dollops
Instructions
1️⃣ Cook pasta until al dente. Reserve ½ cup pasta water before draining.
2️⃣ Melt butter in a large skillet over medium heat.
3️⃣ Add onion, zucchini, and yellow squash. Cook until softened and lightly golden.
4️⃣ Stir in garlic and cook about 30 seconds.
5️⃣ Pour in white wine and let simmer for 2–3 minutes.
6️⃣ Add pasta, parmesan, lemon juice, and reserved pasta water. Toss until glossy and coated.
7️⃣ Season with salt and black pepper.
8️⃣ Finish with fresh basil, red pepper flakes, and ricotta dollops for extra creaminess.
