Is the Chef Manager role one of the most underestimated jobs in senior living dining? In a smaller community, the title may sound simple. But the job is anything but. The Chef Manager may be the chef, purchaser, scheduler, trainer, resident listener, sanitation lead, event support, problem solver, and backup for every open shift.

Larger communities may have more volume, more residents, and more moving parts. But smaller communities often have fewer layers of support. So which is harder? Running a large operation with more people and complexity? Or running a smaller operation where one leader has to wear every hat?

The answer may depend on the support behind the role. Chef Managers do not just need culinary skills. They need leadership training, systems, purchasing support, labor tools, and time to actually manage.

Buffets were supposed to fade away. But in many senior living communities, residents still love them. Why? Because buffets offer choice, flexibility, variety, and the ability to see the food before deciding. For many residents, that matters. A buffet can feel social. It can feel generous. It can create conversation before residents even sit down.

But the key is ex*****on. A tired buffet feels outdated. A well-run buffet with smaller pans, fresh presentation, clear signage, strong flow, and staff presence, can still feel intentional and full of hospitality.

The goal is not buffet vs. restaurant-style dining. The goal is understanding what residents value and building the experience around that.

Standards are not about being strict. They are about protecting the dining experience. So why is this a problem? Because when standards are ignored, phones out, earbuds in, uniforms inconsistent, greetings rushed or missed—the experience suffers. Residents notice the lack of attention. Service becomes uneven. What should feel welcoming starts to feel transactional.

Without clear expectations, teams guess at what is acceptable. Without leaders modeling the behavior, standards lose credibility. And without consistent follow-through, even well-written guidelines become meaningless.

When standards are clear, teams know what is expected. When leaders model them, employees take them seriously. When they are enforced consistently, residents feel the difference.

The real question is not whether your standards are written down. The real question is whether they show up during service.
