Sorshe Ilish is one of the most iconic Bengali dishes, especially cherished during monsoon. It’s made with hilsa fish (ilish) and a pungent mustard-based gravy.
It’s traditional, simple, and full of flavor.

You need:-

- Hilsa fish (ilish) – 4–6 pieces (fresh, cleaned, with skin and bones)
- Mustard seeds – 2 tbsp (black or a mix of black & yellow for balance)
- Green chilies – 4–6 (slit or whole, adjust to heat preference)
- Turmeric powder – ½ tsp
- Mustard oil – 4–5 tbsp (mustard oil is key for authenticity)
- Salt – to taste
- Sugar- 1 tsp
- Water – about ½ cup

Serve hot with plain steamed rice — nothing else needed.
