Come to Merlo this weekend to try an inspirational summer dish from Sicily. The Carnaroli risotto is prepared with white wine, shallot and shrimp bisque. It is served in a carved zucchini and surrounded by a moat of lightly spiced veloute and topped with sauteed red shrimp!

Chef Silvia's weekend creation...finely sliced pan seared eggplant, layered with house made "maccheroncini" tossed with a pork tenderloin, veal and sausage sauce and then topped with sliced boiled eggs, zucchini, caciocavallo, buffalo mozzarella and braised meat. Then baked in the oven!

Using seasonal and super fresh ingredients to create masterpieces is what Chef Silvia is known for! Tonight come join us at Merlo and try this weekend's featured dish of Grass-fed beef tenderloin diced, pan seared, and seasoned with rosemary, thyme, sage, and bay leaf. It is topped with homemade taglioline which is tossed with Parmigiano Reggiano and a ragout of fresh Porcini mushrooms and then showered with fresh summer truffles.

This weekend's featured dish is "IL Pasticcio". It is buckwheat polenta flavored with butter from the Alps and Parmigiano Reggiano. Chef Silvia then layers it with Crescenza, Fontina and Gorgonzola cheese fondue, fresh porcini mushrooms and summer truffle. After being oven grilled, it is finished with roasted porcini, pine nuts, and more truffle.

Tonight come and try Silvia's handmade Angel Hair Spaghettini! It is tossed with a fabulous ragout of garlic, spring onions, lightly spiced lamb sausage and cardoncelli mushrooms and then finished with Pecorino Sardo and summer truffles.

Chef Silvia's inspiration for the weekend special comes from the region of Emilia Romagna, around the small town of Bobbio. Here, groups of women decided to use their knitting needles for another purpose, making pasta! Silvia will be combing this al dente pasta with a very traditional slow stewed lamb ragout with Parmigiano Reggiano, salsiccia, and white wine.

Bianchetto Truffles have arrived!!
Come and join us at Merlo on Maple and experience these amazing truffles. Bianchetto truffles have a similar aroma to the White and Perigord truffles with a slightly more garlic flavor profile. They are less expensive which makes this spring a great time to come and try them. Chef Silvia will be showering her specialty dishes with these truffles for the next 4 weeks.
We are saying goodbye to the Périgord black truffle and hello to the perfect truffle for spring! Say Ciao to The Bianchetto truffle. It is one of the most famous wild truffles and is found abundantly in the Tuscany, Piedmont and Marche regions of Italy.

Spring has come to Merlo on Maple! We have amazingly beautiful Zucchini Blossoms which will be stuffed with Buffalo Mozzarella, just a touch of anchovy and lightly flash fried. They are delicious! Come stop by and try them.
