POV: You Walk Into London… But The Brand Wants You In 1955 Manhattan.

Opened in September 2025 inside the Chancery Rosewood (formerly the US Embassy), Carbone's first European outpost is a time-machine… of sorts.

Carbone London isn’t selling pasta first. It’s selling anticipation, nostalgia, status, and spectacle. The food arrives after the experience has already begun. That’s what elite hospitality brands understand: guests decide how they feel long before the first bite.

Every material, every surface, every light source was chosen to transport you somewhere specific: the golden age of the American supper club.

Designer Ken Fulk called it "mafia-glam," and the details deliver on that promise.

A sweeping hand-painted mural lines the staircase, telling the story of the restaurant itself, think tuxedoed servers, white tablecloths, the mythology of a night at Carbone.

Enter the dining room and you're met with red leather damask from a British fabric house founded in 1874, and ceiling panels dressed in red-tinted mirrors. Underfoot, a checkerboard of Rosso Levanto and Carrara marble sets the rhythm of the room.

Nothing here is accidental. Every design element plays off the next, all in service of one idea that a great restaurant doesn't just feed you, it transports you.
