Adam joins us with serious Chicago credentials — he previously served as Chef de Cuisine at both El Che Steakhouse & Bar and Brasero, and was a 2024 StarChefs Chicago Rising Stars Award winner. We couldn’t be more excited to have his talent behind our kitchen, and we cant wait for you to taste what he’s bringing to the Trino menu.

Carlo Basile, best known as the force behind the local flamenco group Las Guitarras De Espana, has travelled to over 40 countries to perform, teach and study Spanish and ethnic guitar styles with a global influence.

Fran Banish is a Chicago born, formerly LA based Blues-Rock guitar legend. After receiving radio play in Chicago with the progressive pop-rock band Security, he toured and recorded internationally, earning a Gold Record award and a Grammy nomination.

A beautifully brined and roasted half chicken, served with a silky jalapeño–coriander sauce.

This dish leans into the flavors of northern Mexico—simple, bold, and approachable. The jalapeño sauce is smooth and vibrant, similar in texture to a coulis, meaning a blended sauce that’s strained until silky. Charred spring onions and warm flour tortillas are served alongside so guests can build tacos at the table.

Have you tried Trino Steakhouse’s Pork Tomahawk “Pastor-Cino”?

This dish is inspired by two classic pork preparations—Mexican al pastor and Filipino
tocino. Both styles are known for their sweet, savory marinades and deep red color. We
build the glaze with annatto, a seed commonly used in Mexican cooking that gives al
pastor its signature color and earthy flavor.

The pork tomahawk is dryrubbed to
encourage deep caramelization on the grill, then finished with the annatto glaze for a
sweetsour profile with a touch of spice. It’s served with pineapple compressed in
Mexican chile oil and roasted onions.

Warm tortillas are included so guests can build
tacos at the table, creating a fun take on the dish with subtle Asian and Baja-Med
undertones.
