High consumption of green bell peppers (the mild tasting kind) has been associated with an amazing 56% reduced risk for lung in a study out of Europe. Remarkably, that was the second-best risk reduction of any fruit or vegetable in the study. So, what makes green so healthy? It’s a rich source of the cancer-fighting flavonoid called luteolin. It also contains pectic polysaccharides, which are specialized immune-boosting sugars that are toxic to cancer cells (when applied in a test tube). Green peppers make a delicious and healthy addition to salads, sandwiches, wraps, stir-fry and your favorite vegetable smoothie—all for just 23 calories per serving.
