Today I made Zucchini Bread, straight from the garden with farm fresh eggs! It is soooo good!! It's also a great way to preserve the zucchini that grow out of control. I used my food processor to grate the zucchini and put it in the freezer, so that when I want to make bread all I have to do is thaw it out. Grated zucchini also works great in casseroles as a substitute for rice!
