How do you make a salad in the middle of a parasitic 🦠 outbreak linked to lettuce and other fruits and veggies? Look for other great vegan protein sources! I used brown rice, lentils, edamame, and peas. Quinoa is another great option, but it didn’t fit my macros for today. I’m not strictly vegan so I added chicken which allowed me to get almost 42g of protein! A little hummus on top and some diced cucumber, from my personal garden. Wow! Super delicious! Super nutritious!!

I took the day off today because it was supposed to be nice out and I wanted to ride my bike all day. But…it’s pouring rain. ☹️ So, maybe I’ll watch movies and ride my stationary bike. 🤷🏻‍♀️
